Peel the kohlrabi and cut into small pieces. Wash and clean the spring onions and also cut them into small pieces.
Heat the oil in a pan. Press the garlic through a press and add to the hot oil. Add the kohlrabi and onion pieces and cook for about 5 minutes. Add the parsley, a little lemon juice, salt and sugar and transfer everything to a salad bowl.
Keep the lettuce in the refrigerator until ready to be eaten.
