Instructions

  1. Peel the kohlrabi, carrots and celery and cut into pieces that are not too small. Finely chop the onion. Heat butter or oil in a saucepan. Sweat the onions. Add the remaining vegetables. Top up with the broth and simmer for about 30 minutes until the vegetables are soft.
  2. Sieve the vegetables and collect the broth in a second saucepan. Melt the butter in the pan and use the flour to make a light roux. Gradually add the broth and stir well so that there are no lumps. Add the vegetables to the broth. Season the kohlrabi broth to taste with salt, pepper, maggi, parsley, chives and, if necessary, a dash of vinegar.
  3. We eat traditional Bavarian bread dumplings with it.
