Clean, peel, rinse and drain the kohlrabi. Then cut into slices and then into strips. Melt the butter in a large saucepan and sauté the kohlrabi strips in it. Add the vegetable stock and cream and bring to a boil. Let the soup simmer over low heat for about 15 minutes, stirring occasionally.
Now stir in the mashed potatoes. Press the bratwurst mixture out of the skin in portions. Shape the mixture into small dumplings and add them to the soup. Let the dumplings simmer in the soup over low heat for about 10 minutes.
Season the kohlrabi pot with salt, pepper and curry. Sprinkle with the parsley and serve.
