Cut the pork into bite-sized pieces and marinate with the soy sauce, the chopped spring onions, the garlic, the chili paste (gochujang) and the chopped ginger for about 30 minutes.
Heat the oil in a pan and fry the marinated meat over high heat while stirring. Add the water and the rest of the vegetables, stir-fry for another 5 - 10 minutes and season with soy sauce if necessary.

If you are preparing this dish for the first time and cannot tolerate a lot of heat, you should perhaps use a little less of the hot ingredients and remove the seeds from fresh chilli peppers beforehand.
