Peel and cook the potatoes. Cut the pickles into small cubes. Fry the corned beef in a pan. Process the boiled potatoes with the milk and a little nutmeg into a puree. Stir in the diced cucumber and corned beef and season with salt and pepper. Fry the eggs in the pan and place each as a fried egg on a portion of Labskaus. Serve with beetroot.
