The lavender flowers are best cut in the midday sun, as they are then fully open and can develop their full aroma.
Put 4 large cups of lavender flowers or, if you like, a little more in a saucepan and add 2 liters of water.
Then let the flowers steep in the refrigerator for 2 days. Stir a little after a day.
After the 2 days, pour off the water through a sieve.
Mix the lavender water with 2 kilos of sugar and add a splash of lemon juice. Then bring the water to the boil and fill the hot syrup into sealable bottles.
The syrup can be used to perfume cocktails or just water as a drink.
