Knead a yeast dough from the ingredients, slowly knead in water until the dough no longer sticks to your hands. Let rise in a warm place for 1 hour. Knead again and shape into 30 egg-sized balls.
Prepare a paste from cheese, olive oil, onion and spices. Do not salt, the cheese is relatively salty!
Shape the dough balls into small flatbreads with a diameter of approx. 10 cm, pull up the edge slightly and spread the cheese mixture on top. Place on a greased baking sheet and bake at 200 degrees for about 10 minutes.
The cheese pancakes are served as part of a mezze meal - with many different starters.
