Clean and wash the leek and cut diagonally into pieces approx. 2 cm wide. Peel, quarter and core the pears and cut into approx. 2 cm wide wedges. Drizzle with the lemon juice.
Melt the butter in a saucepan, add the honey and let it froth. Add the leek and pears and sauté for about 4 minutes. Season with salt and pepper. Add the vegetable stock and cook everything covered for about 4 minutes. Mix in the thyme and serve.
