- Skin the leg of fallow deer and wash gently, pat dry.
- Heat the clarified butter well in the roaster and fry the meat all around. Brown the peeled, finely chopped onion.
- Add all herbs and spices to fry. Deglaze with hot water and add red wine.
- Roast in the preheated oven at 220 degrees for 20 minutes, now turn down to 190 degrees and let fry for another 1 1/2 hour.
- Now we put the cranberry jam and honey over the roast.
- After a total of 2 hours and 20 minutes, switch off the oven and let it rest for another 20 minutes.
- Place the meat on a platter and put it back in the oven to prevent it from cooling down.
- Pass the sauce through a sieve and thicken with the flour.
- Slice the meat and serve with cranberry jam and sauce.
