Ingredients

  • 1 ½ kg leg (s), (boneless fallow deer leg)
  • 2 onions)
  • 2 bay leaves
  • 10 juniper berries
  • 6 coriander berries
  • 6 peppercorns, red and green
  • 1 sprig rosemary
  • 1 tablespoon clarified butter
  • 1 tablespoon jam, (cranberry jam)
  • 1 tablespoon honey
  • 0.5 liter ½ red wine, good ones
  • 1 ½ liters water
  • 1 ½ tablespoon salt
  • 1 ½ tablespoon flour

Instructions

  1. Skin the leg of fallow deer and wash gently, pat dry.
  2. Heat the clarified butter well in the roaster and fry the meat all around. Brown the peeled, finely chopped onion.
  3. Add all herbs and spices to fry. Deglaze with hot water and add red wine.
  4. Roast in the preheated oven at 220 degrees for 20 minutes, now turn down to 190 degrees and let fry for another 1 1/2 hour.
  5. Now we put the cranberry jam and honey over the roast.
  6. After a total of 2 hours and 20 minutes, switch off the oven and let it rest for another 20 minutes.
  7. Place the meat on a platter and put it back in the oven to prevent it from cooling down.
  8. Pass the sauce through a sieve and thicken with the flour.
  9. Slice the meat and serve with cranberry jam and sauce.
