Prepare the pineapple, mango, bell pepper, tomatoes, garlic and chillies, cut into small pieces and put together in a large saucepan. Add the water, balsamic vinegar, orange juice, sugar and all the spices. Bring to the boil, simmer for about 1 hour, reduce and then puree.
At the very end add the juice of 3 limes.
Now everything can be filled into suitable containers.
