Grate ginger, the amount should be 1 teaspoon. Rub the lemon peel and squeeze the lemon.
Mix flour with baking powder and salt. Add ginger, lemon peel, 1 tablespoon lemon juice and knead with enough butter to make a homogeneous dough that no longer crumbles (approx. 120 g butter, possibly more).
Shape cherry-sized balls, flatten by hand and bake in a preheated oven at 180 degrees for about 12 minutes.
Make a frosting from powdered sugar and lemon juice and brush the biscuits with it after they have cooled down.
