Put the squeezed organic lemons and the rock sugar in a sufficiently large container. Top up with vodka until everything is covered. Let the mixture steep for at least 3 months, then strain and fill into bottles. The longer the liqueur matures, the better it tastes.
This recipe is expressly intended to use leftover organic lemons, the juice is not required.
