Instructions

  1. In 40 g butter, 1 tablespoon flour is lightly sweated together with a little grated nutmeg and the grated zest of half a lemon. Fill up with 250 ml stock and the juice of half a lemon and season with sugar and a pinch of salt. Filter through a fine sieve and mix the slightly cooled sauce with an egg yolk.
