Place glass noodles in a bowl, heat water in a kettle and pour over the noodles.
Heat the oil in a wok or pan with a high rim, add the vegetables and cook, stirring constantly. Put the soft glass noodles in the wok and fry briefly with the vegetables. Stir in the egg. Add soy sauce and sambal oelek or sriracha sauce to taste and stir until the liquid has evaporated. If available, it can be seasoned with lemongrass, lime juice or fish sauce, depending on your taste.
If you don`t like it vegetarian, you can also add shredded chicken. You can also use leftover vegetables here.
