Mix coconut milk and water in a microwave-safe bowl. Stir in the polenta and the sugar or sweetener for about 1 minute. Bring to the boil in the microwave at full power in approx. 2 - 3 minutes.
Carefully (!) Remove the bowl with a pot holder and stir everything well for approx. 2 minutes until the polenta thickens. Depending on the consistency you want, you can also stir in milk or water. If you want, you can sprinkle coconut flakes on top.
This sweet dish is well suited as a small snack, is ideal for a small snack in between and helps with cravings for sweets.
