Ingredients
- 200 ml coconut milk
- 100 ml water
- 75 g corn rits, fine
- 3 teaspoons sugar or equivalent amount sweetener
- Desiccated coconut

- Mix coconut milk and water in a microwave-safe bowl. Stir in the polenta and the sugar or sweetener for about 1 minute. Bring to the boil in the microwave at full power in approx. 2 - 3 minutes.
- Carefully (!) Remove the bowl with a pot holder and stir everything well for approx. 2 minutes until the polenta thickens. Depending on the consistency you want, you can also stir in milk or water. If you want, you can sprinkle coconut flakes on top.
- This sweet dish is well suited as a small snack, is ideal for a small snack in between and helps with cravings for sweets.
