Instructions
- Soak the gelatine in cold water. Mix the lime zest and juice, quark and sugar together.
- Squeeze out the gelatine and mix with 3 tablespoons of quark. Pull under the leftover quark and chill.
- Whip the cream until stiff, fold into the quark mixture. Pour everything into a 1 l pudding pan and chill for at least 4 hours.
- Clean and quarter the strawberries, peel and dice the mango (preferably a mango).
- Mix the fruit with the vanilla sugar.
- Dip the pudding mold in hot water, turn the pudding out onto a plate.
- Cover with the fruits and garnish with the lemon balm leaves and lime slices.
