- Score the chestnuts crosswise and just cover them with cold water in a saucepan. Simmer for 4 minutes from the boiling point. Drain and peel.
- Melt the butter, olive oil and pear cabbage in a pan and simmer gently. Add the salt, pepper and the whole or halved chestnuts.
- Briefly brown the chestnuts and serve.
- Delicious as an accompaniment to meat dishes or as a salad topping.
