Separate eggs. Mash or puree the bananas. Mix the flour, oat flakes, milk, egg yolks and bananas into a smooth batter. In a separate bowl, beat the egg whites until stiff, add a pinch of salt. Pull the egg whites under the smooth dough so that it becomes fluffy.
Heat a large pan, brush with olive oil. Put small heaps of the batter into the pan. Bake the pancakes on both sides until golden brown.
