Cut the liver into strips. Wash apples, peel and quarter if desired, remove core. Cut the pulp into wedges. Fry the chopped liver in hot fat for 1-2 minutes. Remove. Steam the onion wedges in the frying fat until translucent. Add apples, season, sauté. Add the liver. Pour in the broth and cream and simmer for 2-3 minutes. Bind and season to taste. Sprinkle with thyme leaves.
