Lobster in Brandy Instructions

  1. Defrost the lobster, boil (whole) in salted boiling water for 10 minutes. Use kitchen scissors to cut the carcass lengthwise. I was lucky and the lobster was caught with caviar !!! See the greenish streaks? They need to be cleaned out – carefully, without fanaticism!
  2. In a saucepan, fry chopped lemon, onion and garlic in vegetable oil. Add the diced tomato and parsley.
  3. Place the lobster in a saucepan, cut side down. Fry a little (1 minute).
  4. Add wine. Put out 5 minutes.

  5. Turn the lobster over and drizzle with brandy or cognac. Just a couple more minutes, turn it over – and you’re done!
