Clean and chop the cauliflower. Cut the dates into strips.
For the sauce, mix water, peanut butter, garam masala and curry powder. Salt and pepper well.
Fry the cauliflower all around in a wok with oil. Add the dates and cashew nuts, toast briefly. Add the peanut sauce. Let everything simmer for approx. 7 - 8 minutes, until the sauce has thickened. Stir regularly so that nothing burns. Chop the coriander and sprinkle over it.
The dish can be eaten straight or with rice as a side dish.
