Remove the cauliflower from the leaves, remove the stalk and grate the florets.
Now put the tablespoon of coconut oil (you can also use another oil, but coconut oil gives the cauliflower rice a nice taste) in a pan and add the cauliflower grated. Pepper and salt. Fry the cauliflower rice in a pan over medium heat for about 10 minutes, stirring occasionally.
This goes well with chicken gyros or any form of sliced meat.
