Instructions

  1. Put the soy milk in a saucepan, slowly sift in the guar gum and stir quickly with a whisk, otherwise the lump will appear. Let it soak for 10-15 minutes.
  2. Then you add sweetener (liquid) as required, as well as the vanilla flavor. A baking flavor or real vanilla (a pod) is conceivable. If the 8 g extra carbohydrates don`t bother you, you can also add a bag of vanilla sugar. Then stir in 1 - 2 tablespoons of cocoa powder thoroughly.
  3. Then heat slowly and stir constantly. The cocoa powder dissolves well and the guar gum binds better.
  4. Serve the pudding warm or cold. If you let it cool down, stir it every now and then. For extra creaminess, the pudding can also be processed with a hand blender to mix everything.
  5. Don`t necessarily eat a kilo of it at once because the guar gum consists almost entirely of fiber. This has the advantage of zero calories / carbs, but also a disadvantage that I won`t mention here
  6. At the end of the day you have a very tasty pudding, which has about 40 calories and 1 - 1.5 g of carbohydrates per 100 g. You can of course leave out the cocoa powder and add more vanilla flavor. Cinnamon and vanilla are also very tasty!
  7. It is important to buy unsweetened soy milk. It has just 0.9 g of carbohydrates per ml. As a result, 500 g of pudding results in just under 10 g of carbohydrates if you count the cocoa powder.
