Puree the raspberries, chia seeds, sweetener and vanilla with a hand blender for approx. 1 minute. Let the mixture rest for about 10 minutes, as the chia seeds are now doing their job.
After 10 minutes stir the jam, pour it into a glass and let it rest in the refrigerator for a few hours.
Frozen raspberries:
Let the fruits defrost briefly (1 - 2 minutes, depending on the quantity) in the microwave or one to two hours before preparation at room temperature.
The preparation as above, but possibly use a little more chia seeds, as more liquid.
You don`t have to use this mass as jam. I make about one tablespoon of it in low-fat natural yoghurt or quark and thus have a delicious and healthy snack without sugar for in between. Or as a milkshake, then use a tablespoon on a glass of milk.
