Wash the vegetables and cut into small pieces so that they can be arranged quickly later. Put the eggs and cheese in a bowl and mix.
Sear the salmon fillet in a little olive oil. While frying, carefully separate the salmon into its natural fiber parts so that many small slices are created. Fry these really crispy on all sides. Pour a good dash of soy sauce over it. Fry the pressed garlic clove briefly. Turn off the plate.
In a second pan, fry the egg mixture to make an omelette. When this is done, place on a plate and brush with tzatziki. Arrange the crispy salmon on half and spread the vegetables on top. Close and serve.
