Briefly sauté the spinach in a pan and leave to cool.
Grate cheese in a bowl. Mix with the eggs and season with salt, pepper and chilli (about a pinch of each). Then fold in the spinach. Bake two omelets in a little oil.
In the meantime, mix the cream cheese with the onion rings, salt and pepper. Spread this mixture on the lukewarm omelets and top with the smoked salmon. Now roll everything up tightly and enjoy.
Tips: You can also use other herbs, for example cress, chives or parsley.
Either eat right away or wrap in cling film and store in the refrigerator.
