  2. Work the turkey meat into thin slices with a meat tenderizer and season with salt and pepper. Cut the mozzarella and tomatoes into thin slices. Spread the pesto on one side of the meat with a spoon and top with tomato and mozzarella. Place two to three basil leaves on top and roll them up carefully. The roulades may need to be fixed with a few toothpicks so that they don`t fall apart.
