Cut the bell pepper, zucchini, onion and garlic into fine strips. Cut the mushrooms into slices.
Fry everything in a little olive oil for 3-5 minutes. Then salt, pepper and season with paprika powder. Deglaze with balsamic vinegar and add the finely chopped parsley. Dice the toasted farmer`s bread and fold in.
Let the salad cool for about 1 minute and then add the olive oil. Mix everything again, season to taste and serve immediately.
