Instructions

  1. Put the bulgur with a little salt in 250 ml of boiling water, cover and let soak on the switched off stove.
  2. Clean the red cabbage and cut into fine strips. Cut the onion into half rings. Season both in a bowl with salt and knead vigorously with your hands.
  3. Heat some oil in a pan and sauté the cabbage mixture over medium heat. Season with 2 tablespoons of vinegar, a pinch of cinnamon, 1 - 2 tablespoons of honey and, if necessary, salt. Continue steaming for 5 minutes,
  4. Season the bulgur with 1 - 2 teaspoons of harissa. Roughly chop the parsley leaves. Stir the yoghurt with 2 tablespoons of milk until smooth and roughly crumble the feta
  5. Serve the red cabbage with bulgur, feta and yoghurt and sprinkle with parsley.
