Instructions

  1. Whisk the flour, melted butter, milk, eggs and a little salt together. Use a teaspoon to cut off small dumplings from the mixture and let them cook for a few minutes in boiling salted water (I would estimate about 5 minutes). Put the dumplings in a sieve with a ladle and rinse with cold water.
  2. Melt some oil or clarified butter in a pan. Peel the onions and cut into fine rings, then roast them in the pan until light brown. Put a trick of butter in the pan and melt it. Add the dumplings and sweat them until they are hot, season with salt and pepper.
  3. Sprinkle with about 100g of grated cheese and let it melt with the lid closed, then serve.
  4. If you want, you can melt bacon in the pan in addition to the onions.
  5. I often make double the amount of dumplings so that I still have some for the next day.
  6. The dumplings also taste very good with various pasta sauces.
