1. The eggs are separated and the egg whites are beaten with a pinch of salt until stiff. Then mix the eggs with the vanilla sugar, baking powder, vanilla extract and a pinch of salt in another bowl.
2. Now fold in the flour and milk until the dough has a creamy consistency (see video). Then fold in the stiffly beaten egg white.
3. Next, preheat a pan and add the blueberries to the batter and stir in gently so that they don`t bleed out too much.
4. Bake the pancakes in the pan, each side should have a golden brown color and then serve with maple syrup or my blueberry sauce (also here as a recipe online).
