Wash and clean the baby spinach. Roast the pine nuts in a pan over medium heat without fat.
Peel the mango and cut into small, irregular pieces. Also cut half the pack of feta cheese into irregular pieces and mix everything with the spinach. Mix in a little balsamic vinegar.
Arrange the salad on a plate and garnish with the pine nuts, some grated Grana Padano and crema di balsamico and serve.
