Peel the mangoes, separate the pulp from the stone and cut into thin slices. Finely peel the lemon peel with a zest, squeeze the lemon.
Put the mango slices in a bowl and season with lemon zest, lemon juice, sugar, oil and a pinch of salt. Fold in the lemon balm, let it steep for about 15 minutes and serve.
This fruity salad tastes good on its own, with vanilla ice cream and even with meat or fish dishes.
