Instructions

  1. Peel the mangoes and cut the flesh into small cubes. Peel the garlic, chop it finely and sweat it in the oil. Add the mango, pour a little broth or juice over it and cook for 15 minutes.
  2. Depending on the consistency you want, puree a little. I like it when the sauce isn`t completely smooth.
  3. Core the chillies and cut into fine strips, clean the spring onions and cut into fine rings. Add both to the sauce. Reduce to taste and season with salt, pepper and a little sugar.
  4. This sauce goes best with fish and poultry with rice, but it is also delicious as a grill sauce.
