Instructions

  1. Put the flour in a mixing bowl and make a well. Dissolve the yeast and sugar in the lukewarm milk, pour into the hollow and sprinkle with flour. Cover the dough and let it rise in a warm place for about 15 minutes.
  2. Add margarine, egg yolk, vanilla sugar, salt and lemon peel aroma and work the ingredients into a smooth dough using a dough hook. Let the covered dough rise for another 50 minutes. Knead well on a floured work surface until the dough is elastic. Return to the bowl, cover and let rise for another 50 minutes.
  3. Knead the dough well again and divide into six equal portions.
  4. Roll out each portion into an oval of approx. 25 cm. Cut out the shape of the mare`s guy.
  5. For the arms, make an approx. 2 cm wide cut on the long side and cut the ends after 8-10 cm. Form a ball with the rest of the arms and press it flat as a head. Cut into the middle of the dough about 10-12 cm from the bottom and shape the legs from it. Arms and legs can be bent at will.
  6. Place the guys about 4 cm apart on the baking sheet (underlay with baking paper) and let rise again for 20 minutes. Then brush with egg white and press raisins into the dough.
  7. Preheat the oven to 200 ° C. Bake the mares` fellows on the middle rack for 20-25 minutes, until they are golden brown.
  8. Let the mare`s guys cool down on a wire rack.
