- Wash the mushrooms, cut into thin slices and blanch in boiling salted water for about 3 minutes. Drain and drain well. Express well with your hands.
- Now chop it into small pieces and place in a large bowl.
- Finely chop the clove of garlic and coarsely chop the parsley, cut the chilli pepper into rings.
- Season to taste with the wine vinegar, oil, salt and pepper.
- Should stand and pull through for about 6 hours, preferably longer overnight.
- If necessary, season again with salt and pepper and a little sugar.
