- Grill eggplant (possibly salted, washed, dried) in slices in the oven for about 20/25 minutes. Brush twice with olive oil.
- The longer it takes to brown, the better the sugar in the aubergine will caramelize ( I`ve read ).
- Then leave to marinate for a day in garlic, olive oil, parsley, salt and pepper (both sparingly).
- The aubergine slices can be a bit dry after grilling - this is done by marinating!
- Ideal on an Italian starter plate!
