Instructions

  1. Dice the cheese, pluck the leaves from the tarragon, finely chop the parsley, puree the garlic clove, olive oil and lemon juice. Season with a little salt (be careful, not too much) and pepper, pour over the cheese and mix well.
  2. Let it stand for a couple of hours. Take out of the fridge before serving so that the cheese comes to room temperature.
  3. Sheep cheese, e.g. Manchego, can also be used.
