- Clean the leek, wash thoroughly and cut diagonally into 4 cm long pieces.
- Bring the water with lemon juice, bay leaf, salt, pepper and sugar to the boil and simmer for approx. 5 minutes.
- Add the leek and cook on medium heat for 5 minutes until crisp, then remove and drain onto four plates.
- Mix 5 tablespoons of the still warm cooking marinade with the olive oil and capers, spread over the leek and serve lukewarm.
