Finely chop 1 fresh chilli pepper and 2 garlic cloves.
In a bowl, combine 2 tablespoons lemon juice, 250ml orange juice, and 125ml olive oil. Add the chilli, garlic, 1 tablespoon sea salt, 1 teaspoon black pepper, and 2 bay leaves. Stir well.
Wash the 4 pork neck steaks and pat dry. Place them in the marinade, ensuring they are completely covered. Refrigerate for at least 1 hour (or preferably overnight).
Remove steaks from the marinade and grill on medium-high heat for 5-6 minutes on each side, until the internal temperature reaches 63°C (145°F). Serve with a salad.
