Cut the meat into thin strips across the grain and mix with the sugar in a bowl.
Peel the onions and chop them up a bit. Put in the blender with the curry powder, turmeric, salt, pepper and oil.
Add 3 tablespoons of the thick top part of the coconut milk and puree everything finely. Mix the paste carefully into the meat and leave to marinate for about an hour.
Then remove the meat, wipe off the paste and place the meat on the skewers in a wave-like shape. It is best to fry the skewers in a coated pan in portions on both sides for approx. 2 minutes and keep them warm in the oven at 80 degrees until they are all fried.
