Instructions

  1. Bring a pot of salted water to a boil. Blanch the spring onions for 2 minutes until tender but still crisp. Drain in a colander.
  2. Whisk together the wine vinegar, oil, Dijon mustard, pressed garlic, salt, pepper, and chopped parsley, chervil, or coriander in a bowl.
  3. Pour the warm vinaigrette over the warm spring onions and let steep for at least 15 minutes, preferably 30 minutes or longer.
