- 2 bunches spring onion (s), cleaned
- 1 tablespoon vinegar (wine)
- 1 teaspoon mustard (Dijon)
- 50 ml oil
- 1 clove (s) garlic, pressed
- 2 tablespoon parsley, chervil or coriander chopped
- Salt and pepper, black

- Blanch the spring onions in salted water, they must stay crisp. Drain in a colander. Mix the vinegar, oil and mustard together. Add salt, pepper, garlic and herbs.
- Pour it over the still warm spring onions and let it steep for at least a quarter of an hour, preferably longer.
- Tip:
- Use shallots, spring onions or tender leeks instead of the spring onions.
