A simple recipe for a delicious pastry is marshmallows. This dessert is somewhat similar to marshmallow, but you should not confuse it with it, because their composition and shape are completely different. And the taste of homemade marshmallows cannot be compared to products from the store.
Combine 175 g sugar, 75 g boiled water, and 1 g citric acid in a saucepan with a double bottom.
Stir over high heat until the mixture boils.
Reduce to low heat and simmer for 42 minutes until the syrup reaches the thread stage – thin strands will form when a spoon is lifted from the mixture.
Stir in 1 g soda.
Continue stirring until the bubbling stops completely.
Dissolve 25 g gelatin in 100 g warm water and let it sit for about 5 minutes until swollen.
In a separate saucepan, combine 400 g sugar, 160 g of the cooked syrup from step 3, and 90 g water. Stir over low heat until the sugar is completely dissolved.
Using an electric mixer, beat the swollen gelatin until thick and pale, about 3-5 minutes. Optionally add food coloring while beating.
Gradually add the cooled sugar syrup from step 7 to the beating gelatin until fully combined.
Line a container with cling film and pour the marshmallow mixture into it. Smooth the top and cover with cling film.
Refrigerate for 6 hours until completely set.
Mix 1 teaspoon corn starch with 50 g powdered sugar.
Remove the marshmallow block from the container and coat it well with the starch-sugar mixture.
Coat a knife with the starch-sugar mixture and cut the marshmallows into small pieces.
