Mix the mascarpone, low-fat quark, 250 g applesauce, cinnamon, powdered sugar, 2 tablespoon lemon juice and vanilla sugar together well. Quarter, core and finely dice apples. Mix immediately with 1 tablespoon lemon juice and 300 g applesauce. Break the sponge fingers.
Layer the apple sauce mixture with the biscuits and the cream in glasses or in a large bowl.
Chill for 1 hour before consumption. Garnish with apple slices if necessary.
