Mashed Potatoes with Vinaigrette

Instructions
Let the cooked potatoes steam and pour 100 ml of heated olive oil over them. Mash with a potato masher. Fold in lemon zest and juice as well as spring onions and parsley. Salt, pepper and drizzle with 50 ml of olive oil.
