- Lightly toast the coconut flakes in a coated pan without fat and set aside.
- In a saucepan, bring the coconut drink with the oat flakes, salt and vanilla to the boil and let it soak over a low flame.
- Cut a few slices from the banana as a decoration. Mash the rest of the banana with a fork and mix with the matcha powder.
- When the oatmeal has the desired consistency, remove the pan from the stove and mix with the banana and matcha mixture.
- Top the porridge with the roasted coconut flakes and the banana slices and, if necessary, serve sprinkled with some matcha powder.
