- Peel off the chicory leaves and wash lukewarm. Drain and cut into strips. Cut the onion into very fine rings. Core the dates and cut into strips.
- Chop the parsley and mix well with the remaining ingredients for the dressing. Season to taste with salt and pepper.
- Cut the dumplings into strips and fry them in a little oil in a pan until crispy.
- Mix the salad with the dressing and spread out on the plates. Place the dumplings hot on the salad. Garnish with a little parsley and serve.
